Astrid Saalbach made her debut as a playwright with the radio play Traces in the Sand in 1981.

The Confirmation (1982) and Children of the Shadows (1983) were originally written for radio, whereas A Fading World (1984) and Myung (1989) started out as televised plays.

Many of Astrid Saalbach's plays are written for female-dominated casts. The Invisible City (1986) was written as a stage play for four women, The Dancing Lesson (1986) has seven female roles and one male role. Morning and Evening (1993) has four roles for female actors and three roles for male actors. The Blessed Child (1996) is to be performed by four women and two men, as is Ashes to Ashes. Dust to Dust (1998). The Cold Heart (2002) is written for four women and three men, while The End of the World (2003) is written for three women and two men. Red and Green (2010) has three roles for women, two for men.

Fornication (written in 1992, for one male and one female performer) was Saalbach's contribution to a collective production about the seven deadly sins. Pietá (2007) also has one role for a female actor, one for a male.

Astrid Saalbach has won several awards. Among them are honorable award of The Danish Playwrights' and Screenwriters' Guild (1995), The Holberg Medal (1996), the lifelong endowment of Danish Arts Council (1997), the Danish theatre award Reumert for best play (2004) and The Nordic Drama Award (for 2002/2003, delivered in 2004).
